Badham (Almond) Kheer


This is a quickie recipe for a delicious snack/drink

Ingredients:
  1. Almonds - 1 cup
  2. Milk - 5 cups
  3. Sugar - 1 cup
  4. Cashew nuts
  5. Sarai Paruppu (I don't know the English name for this!)
  6. Saffron
  7. Ghee
Method:
  1. Soak Almonds overnite and peel the skin off
  2. Make a smooth paste of almonds with little milk in a blender
  3. Mix the blended paste with remaining milk, sugar. Make sure the sugar is completely dissolved. Check for sweetness and adjust sugar accordingly
  4. Boil the mixture until the raw smell is gone
  5. Add saffron when the mixture is medium hot
  6. Separately fry cashews and sarai paruppu in ghee and add this to the above mixture
  7. Cool it and Enjoy!
