Ingredients: Black Bean (Soaked overnight and pressure cooked) Green Pepper Corn Garlic Cherry Tomatoes Onion Avocado Cilantro In butter or oil, saute garlic, onion, corn, green pepper, black bean, cherry tomatoes. Add cumin powder, chilli powder or sriracha, salt, pepper and lemon/lime. Garnish with Cilantro and Avocado.

Avocado Mousse

Ingredients: 2 ripe avocados 2 tablespoons honey or agave (more or less to taste) 1/4 cup unsweetened cacao powder 1/2 teaspoon vanilla extract pinch of salt Blend everything to smooth. Serve it chill with fresh fruits and chopped nuts om top.

Soak chia seeds overnight in water or milk. While serving, add more milk or water to adjust the consistency Add your favorite fruit and nuts ( I added mango and pistachios) I did not add sugar, but you can add sugar or honey.

The result came out incredibly delicious - the cake was very flavorful and moist. For the frosting, I only used 3.5 cups of powdered sugar, and it was more than sweet enough, with a nicely balanced cream cheese vs. sweet flavor. If I would change anything again, I would use less pecans - it's a bit too nutty for my personal tastes.
