Black Bean Salad

Ingredients: Black Bean (Soaked overnight and pressure cooked) Green Pepper Corn Garlic Cherry Tomatoes Onion Avocado Cilantro In butter or oil, saute garlic, onion, corn, green pepper, black bean, cherry tomatoes. Add cumin powder, chilli powder or sriracha, salt, pepper and lemon/lime. Garnish with Cilantro and Avocado.

Frittata (without cheese)

Ingredients: Spinach with garlic (Saute) Any veggies, I used Broccoli, Cherry tomatoes, Green Peppers Any herbs, I used dry thyme and Sage Salt and Pepper, paprika (optional) tablespoon olive oil 3 Eggs Milk accordingly Mix everything, bake it for 15 mins at 375F or until done. Chia seeds - I soaked it overnight.. may be few hours is enough Vermicelli - cook it Mango pulp - grind mango without water Milk - boil milk with little sugar Mango pieces Nuts Mango or Vanilla icecream Chill all the ingredients for few hours before assembling When ready assemble it, from bottom Chia seeds Mango pulp Vermicelli Milk Nuts Repeat the layers Top it with icecream, mango pieces and some nuts

Avocado Mousse

Ingredients: 2 ripe avocados 2 tablespoons honey or agave (more or less to taste) 1/4 cup unsweetened cacao powder 1/2 teaspoon vanilla extract pinch of salt Blend everything to smooth. Serve it chill with fresh fruits and chopped nuts om top.

Soak chia seeds overnight in water or milk. While serving, add more milk or water to adjust the consistency Add your favorite fruit and nuts ( I added mango and pistachios) I did not add sugar, but you can add sugar or honey.
